CRUMBED CHICKEN SCHNITZEL

ON CARAMALISED ONION MASH WITH FRESH PINEAPPLE SALSA

Crumbed Chicken Schnitzel

INGREDIENTS

180g Mash Potato already made
30g Onions, julienne
20ml Balsamic Vinegar
Salt and pepper to taste
150g Chicken Schnitzel

METHOD

  1. In a frying pan oven medium heat, add the julienne onion and cook until golden brown and cooked through. Add the Balsamic vinegar and cook until vinegar has evaporated
  2. Add the caramalised onion to the mash potato, adjust seasoning
  3. Preheat oven to 180C and cook the Chicken Schnitzel for 12 – 15 minutes, until fully cooked

To Plate:

Place caramalised onion on the pate, top with schnitzel. Add a Pineapple salsa ( or salsa of choice) over the schnitzel and rocket on the side.
